Cooked Half Cleaned
West Australian Cold Water Lobster
SIZE: Raw material is mainly from
an 'A' lobster which has a 5/6 oz tail size.
The weight range for each half is 5 ½ -8 ounces (160-230g) to
which a protective 10 % glaze is added to prevent freezer burn.
PRODUCTION: Lobsters are boiled whole
from live raw material to insure a premium product.
After boiling, the lobster is split clean in half, and the "gurrie"
(liver, stomach, etc) is washed away, leaving only clean, white
flesh.
The product is frozen (using a nitrogen tunnel) and a starch glaze
is applied afterwards to protect the cooked lobster half from freezer
dehydration.
The product is then packed four halves (two lobsters) per shrink-wrapped
tray.
Overall case pack is 24 halves (twelve lobsters) per carton. (6
trays)
PREPARATION: Lobster can be immediately
broiled; warming through will bring optimal
cooking without toughening.
The product is pre-cooked and the cleaned head cavity is suitable
for any sauce that compliments lobster. Just reheat, add sauce and
serve!
