BOS'N Salt Cod is a premium product produced in Nova Scotia,
Canada. The Canadian Maritimes, since the 1600's, has a long history
of producing premium Salt Cod. Although the salting method has changed
throughout the centuries, the end product remains the same:
Preserved codfish that has an intense, concentrated
flavor.
BOS'N Salt Cod is processed with a pickled cure. The codfish
is split whole and then stored in a vat (alternating salt and fish)
for 14 days. The fish is then removed and dried in a 'hot room'
for approximately 24 hours until it has the proper moisture content.
Once dried, the fish is boned, skinned and packed.
BOS'N Salt Cod has many applications including but not limited
to chowder, croquettes and salads. Many of the high end foodservice
operators recognize the value of the intense flavor that Salt Cod
brings to the table and an increasing number of menus now include
Salt Cod. To get the maximum flavor out of your Salt Cod try the
following easy recipe for reconstitution:
Soak salt cod in water for a minimum of 24
hours, changing the water at least once. Fish is then ready to be
used.
