Seasons: Mostly year round, greatest supplies
in colder months
Characteristics: Both fish can grow up to 36 -
40 inches in length. The significant distinctionbetween these and
other flatfish is texture. Due to natural attributes, the flake
is not as firm as other flatfish. (Also, being frozen twice can
affect softness.)
Grade/Pack: Product is sold in fillet form or
whole IQF and Shatterpack. Also frozen into blocks and processed
into portions.
Traditional Applications: Retail/Food service.
These two species are the most cost-effective of the flatfish family.
Substitutes: Any high-quality, cheap white fish.
