Production Methods: Product is processed
from live lobsters only. The tails are broken off, and the shell
removed and deveined with a crochet needle. One pound bags are filled
with meat and then frozen on racks in a blast freezer.
Specifications: The meat is whole,
not broken, and is produced from 2 oz tails and shedder (softshell)
lobsters. The product is raw, all #1 large pieces providing exceptional
quality.
Packaging: Product is packed in 8/5
lb boxes for a 40 lb master case. Each 5 lb unit contains 5x1 lb
bags of tail meat.
Application: Product is well-suited
for baking, sauteeing, or any application calling for an uncooked
lobster meat product.
