November.
Characteristics: Very similar in appearance to
haddock with a fat layer between the flesh and the skin. Fish has
a whiting head, skin correlation resembling haddock with a natural
line, whiter flesh and extremely moist delicate flavor.
Grade/Pack: Sold mainly frozen, skin on or skinless,
both IQF and Layer Pack.
Traditional Applications: All food service areas
where haddock is served; excellent broiled or fried.
Substitutes: Haddock, Whiting (merluza gayi)
