Atlantic Pollock
Name: Atlantic Pollock (a.k.a. Boston Bluefish)
Latin Name: Pollachius vivrens
Harvest Area: Abundant from Nova Scotia to Virginia
Seasons: Landed throughout the year - largest
landings generally occur in the Fall as the fish concentrate to
spawn.
Characteristics: Distinguished from the whole
cod by the blue-green-colored white lateral line and somewhat-forked
tail. Flesh is not as white as cod, although it cooks up light and
is high in protein and low in fat. Has stronger flavor than cod.
Not to be confused with Pacific Pollock.
Grade/Pack: Drawn, Dressed, Steaks, Fillets. Usual
size is 1.5 - 12 lbs. (Grading less precise than for cod.) Fillets

Traditional Applications: A good choice when looking for
low cost and steady availability. Makes a good substitute for cod
and is a main ingredient in fish chowder. Sold through retail and
food service operations. Very popular in the Southwest region of
the U.S.
