Bigeye Tuna
Name: Bigeye Tuna
Latin: Thunnus obesus
Origin: Bigeye Tuna inhabit warm,
temperate, and very deep waters throughout the world. Bigeye are
found in the Indian and Atlantic Oceans, with most of the commercial
fish caught in the Pacific Ocean. Most Bigeye exported to the U.S.
come from Equador and the Carribean.
Method of Production: Fish are usually
caught by hook and line, then processed aboard the vessel to ensure
a high level of quality.
Characteristics: Fish are similar
in appearance to Yellowfin specie, with the main differences being
that Bigeye have a larger head, thicker body, and large, distinctive
eyes. Meat from this species is deep crimson in color, with high
fat and oil content. Product usually retains color longer, has a
longer shelf-life, and has a richer flavor than the Yellowfin specie.

Applications: Best barbequed, grilled
or smoked due to high oil content, but can be baked, broiled or
