Latin Name: Loligo pealei

Harvest Area: North- to Mid-Atlantic

Seasons: Available year round. (Concentrations from Spring - Summer.)

Characteristics: Loligo squid is long-finned with a quill for a backbone. It is a quick grower, with tube length ranging from 2 - 12 inches. The tube is the prized eating part.

Grade/Pack: Sold fresh in cleaned (skin removed, leaving tubes and tentacles) form or whole. Frozen is sold cleaned tubes only or in a 70% tube/30% tentacle pack or whole for export sized in 2 inch tube length increments. Cleaned sizes are 3/5", 5/8" or 8/12" tube lengths.

Traditional Applications: Food Service application. Tube and Tentacles are served fried, marinated or stuffed.

Substitutes: Other squid species.
