Harvest Area: Beds off Florida's west and east
coasts.
Seasons: Available year round.
Characteristics: Meat is cream-colored. West coast
scallops have a higher sugar content. Good shelf life.
Grade/Pack: Shucked meat with an average of 90/110
ct per lb to 200/300 ct. Shucked by hand or machine, primarily sold
fresh in gallons.
Traditional Applications: Food Service where smaller
count scallops are needed.
Substitutes: New Zealand Bay Scallops, Peruvian
Scallops and Mexican Bay Scallops.
