Characteristics: Large globular body with eight
long arms covered by suction cups. Very delicate flavor.
Grade/Pack: Marketed fresh or frozen, usually
gutted with eyes, beak and ink sac removed. Sized by 2 lb increments
and IQF or bulk frozen. Sizing is designated by how many lbs each
octopus is in the package: 1/2 Spanish means 1 - 2 lb each octopus.
Traditional Applications: Ethnic Markets.
Substitutes: Squid.
