Name: Rain Forest Tilapia (Farmed)
Harvest Area: Costa Rica
Seasons: Available year round.
Characteristics: Tilapia has lean white meat with
a light, delicate flavor. Its firm texture allows great flexibility
of preparation. (Legend says that Tilapia was the fish Christ multiplied
a thousandfold to feed the masses.)
Market Forms: Fresh or IQF skinless, completely
boneless fillets; whole and dressed fish.
Traditional Applications: Extremely versatile,
Tilapia can be poached, broiled, sauteed, baked, grilled, microwaved,
fried, steamed, "blackened," stir-fried or used in bouillabaisse
and other soups. Accepts sauces and marinades well.
Substitutes: Snapper, sole, pompano, flounder,
sea bass and orange roughy.
